{Sides}

I haven't made anything different lately so that's why I have not posted the past few days.  I wanted to share a few sides that I did make over the weekend.  

Paleo Dirty Rice


This is so good!  It isn't actually rice...it is grated cauliflower with bell pepper, onion and spices (I will link the recipe).  I made this last week with shrimp and it was more a meal than a side.  It has amazing flavor and goes with everything!  It is even good cold :)  The most time consuming part is grating up the cauliflower...you can either use a box grater or a food processor...I have used the box grater because I am worried the food processor will make it mushy...little more work using the grater but I really like the end result.  I have to omit the celery but it definitely isn't lacking any flavor!



Roasted Asparagus

Honestly I have never had roasted asparagus...until now, we have either steamed or grilled it.  Roasting it is so easy and the flavor is AMAZING!  And it is so easy...just a little Olive Oil and sea salt...that's it!  I even ate some of the leftovers, cold, yesterday and it was super yummy!
